I am trying to find a way to change the layout to landscape for just a few pages of my document. I can't find any way of doing this without making more than one PDF. Am I missing something or does this feature not exist currently?

Check the parts "page layout", "page manipulation" and "page properties".
You should look at the set...-functions.
If you don't find anything useful you should do it separately and then a merge at the end.
